(Baby H just had her 1st birthday today! We didn't use this recipe, but I just had to post the cute ice cream cake I made and want to wish her a Happy, Happy Birthday!!:))
Ingredients:
1 pkg. Duncan Heinz cake mix---chocolate or yellow works best but you can use whatever.
¼ c. flour (for high altitudes only)
1 can mandarin oranges (about 11 oz.)
3 eggs
1/3 c. oil
Instructions:
Put oranges (juice and all) in blender and mix. Combine blended oranges and all other ingredients in a bowl and mix well. Bake at 350 F for ~30 minutes (check cake mix box for baking times depending on what size pan you are using). Frost with your favorite icing.

....speaking of icing, besides basic buttercream, this is my favorite quick icing.
Ingredients:
1 tub cool whip (8 oz)
1 package instant vanilla pudding mix
1 cup milk
1 tsp. vanilla
Mix pudding mix, milk, and vanilla until smooth. Fold in cool whip. You can also add some crushed berries or a can of drained crushed pineapple (whatever flavors you're going for). Frost cake or eat directly out of bowl.:)
